I am at a loss as to why they are not working. we have solder over 2,000 Piscreens and I have never seen this issue before.
And we do test every PiScreen, this is why I am surprised you have a problem with all three.
What happens if you disable the PiScreen driver? E.g. remove or comment out dtoverlay=piscreen2r
in /boot/config.txt.. Does the Pi boot while the PiScreen is still connected?
Do you have any other hardware or software using GPIOs on the Pi? The image below shows the pins used by PiScreen2
