Can I configure the PiScreen so that both it and the HDMI out are displaying at the same time? Mirroring each other?
How would I do this?

Yes and No.
The is a ‘hack’ that mirrors whatever is shown on the HDMI output onto PiScreen.
It is called framebuffer copy or fbcp.https://github.com/notro/fbtft/wiki/Framebuffer-use#framebuffer-mirroring
